Cara Membuat MIE AYAM
Bahan :
10 porsi mie siap pakai
3 batang daun bawang
20 bakso sapi
Topping Ayam :
1 kg ayam fillet, potong dadu
3 batang daun bawang bagian putihnya, rajang
4 cm jahe
2 daun salam
2 serai
3 cm lengkuas
2 daun jeruk
2 sdt garam
50 gr gula merah
1 sdm kecap manis
1 sdt kecap asin
2 sdm saus tiram
1 sdt merica
1 sdt kaldu bubuk
1 sdt minyak wijen
3 sdm minyak
800 ml air
Bumbu Halus :
8 bawang merah
5 bawang putih
2 cm kunyit
3 kemiri
Minyak ayam bawang :
50g kulit dan lemak ayam
5 bawang putih cincang
150 ml Minyak goreng
Kuah :
Tulang ayam
Garam
3 bawang putih, cincang tumis sebentar
2 cm jahe
1/4 sdt merica
1 sdt kaldu bubuk
1 batang daun bawang, rajang
1,5 liter air
Pelengkap:
Kecap
Saus sambal
Sambal
Acar timun
Bawang merah goreng
Cara Membuat :
1. goreng lemak ayam dengan tungkan 100ml minyak, api kecil, sampai wangi. tuangkan/masukan semua bawang putih cincang, masak sampai kuning dan disaring
2. Tunggu sampai minyak panas ,lalu tumis bumbu halus, salam, lengkuas, serai, jahe, dan daun jeruk sampai wangi. Beri sedikit air
3. setelah itu masukan ayam dan daun bawang putih , masak sampai ayam berubah warna. setelah itu masukan air sedikit - sedikit lalu di aduk bersama bumbu2, aduk rata, masak sampai ayam matang dan bumbu meresap.
4. sop kuah : masak air sampai mendidih, masukkan daging ayam, bawang putih yang sudah ditumis, jahe, rebus sampai wangi. Masukan bakso ayam super besar , bubuhi garam, merica, kaldu bubuk, koreksi rasa, angkat, buang tulang ayamnya.
5. Rebus caisim dan mie, tiriskan. didalam mangko kaca, beri 2 sdt minyak ayam bawang, garam dan merica, 1 sdm kuah dari topping ayam, aduk dengan sumpit. Masukan rebusan mie hun, aduk rata sampai mie terbalut bumbu. Beri hiasan pada makanan.
